If you love breakfast as much as I do, you know that nothing beats a plate of crispy, golden air fryer home fries. These diced breakfast potatoes are the perfect sidekick to breakfast, brunch, or any meal of the day. They also make a great after-school snack for kids with just a dollop of ketchup.

Ingredients
  

  • 750 g potatoes (Yukon Gold, Maris Piper, Russet, King Edward, or Desiree potatoes)
  • 1 tbsp cooking olive oil
  • ½ tsp salt
  • ½ tsp paprika
  • ¼ tsp freshly ground black pepper

Instructions
 

  • Start by peeling the potatoes and dicing them into small, even-sized 1-inch (2 ½ cm) cubes.
  • Soak the potatoes in cold water for 30 minutes to remove excess starch. This step is essential for extra crispness and even browning. If you're short on time, you can skip it, but I strongly recommend soaking the potatoes for at least 15 minutes.
  • Drain the potatoes and dry them throughly with a clean kitchen towel or paper towel.
  • In a large bowl, toss the diced potatoes with the olive oil, paprika, salt, and black pepper. Make sure every piece is well-coated with the seasoning.
  • Preheat your air fryer to 383°F (195°C) for a few minutes. Preheating helps the potatoes start cooking immediately and ensures a nice crispy texture.
  • Place the seasoned potatoes in the air fryer basket in a single layer. Depending on the size of your air fryer, you may need to cook them in batches. Cook for 15-20 minutes, shaking the basket halfway through to ensure even cooking. The potatoes should be golden brown and crispy when done.
  • Once the potatoes are cooked, transfer them to a serving bowl and garnish with chopped fresh parsley if desired. Serve immediately and enjoy!

Notes

  • Dice the potatoes into even-sized 1-inch (2 ½ cm) cubes to ensure all the potatoes cook evenly and brown uniformly.
  • Soak the potatoes in cold water for 30 minutes to remove excess starch.
  • For the crispiest potatoes, make sure they are in a single layer in the air fryer basket. Overcrowding can lead to uneven cooking.
  • Shaking the basket halfway through cooking helps the potatoes cook evenly and get crispy on all sides.
  • Feel free to tweak the seasoning to your liking. You can add garlic powder, try different spices, or even toss the potatoes with grated Parmesan cheese after cooking.
