Ingredients

  • 1 ½ lbs floury potatoes, such as Russet, Maris Piper, King Edward, Desiree, or Rooster. (700 grams)
  • ½ tbsp plain white flour / all-purpose flour
  • 1 tsp salt
  • ½ tsp freshly ground black pepper
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp dried oregano
  • ½ tsp cajun spices
  • ½ cup grated cheddar
  • spray oil

Instructions

  • Peel the potatoes, cut them in half, and place them in a large pot filled with cold water. Bring to a boil over high heat and cook for 7 to 8 minutes, until the potatoes are slightly tender but still firm in the middle.
  • Drain the potatoes and leave them to cool until they are easy to handle. Grate the potatoes using the large holes of a box grater.
  • Place the grated potatoes in a large mixing bowl. Add the flour, salt, black pepper, garlic powder, onion powder, dried oregano, Cajun seasoning, and grated cheddar. Mix gently until everything is evenly combined.
  • Take small portions of the potato mixture and shape them into short cylinders. Place the shaped tater tots on a plate or tray as you work.
  • Preheat the air fryer to 400°F / 200°C for about 5 minutes. Lightly spray the tater tots all over with oil.
  • Place the tater tots in the air fryer basket in a single layer, leaving space between them. Cook in batches if needed.
  • Air fry at 400°F / 200°C for 18 to 20 minutes, turning gently halfway through, until golden brown and crisp.
  • Let the tater tots cool for a couple of minutes before serving with your favorite dipping sauce.

Notes

  • Use floury potatoes for the best texture. Russet potatoes are a good choice in the US, while Maris Piper, King Edward, Desiree, and Rooster potatoes work well in the UK.
  • Do not overcook the potatoes before grating. They should be partly cooked, not soft all the way through.
  • If the mixture feels too soft to shape, chill it for 20 to 30 minutes before forming the tots.
  • Cook the tots in a single layer. Overcrowding will stop them from crisping properly.
  • For frozen homemade tater tots, cook straight from frozen at 400°F / 200°C and add a few extra minutes as needed.
