Ingredients
  

  • 1 stick butter (softened at room temperature) (125 grams)
  • 1 ½ cups plain white flour / all-purpose flour (175 grams)
  • ½ cup powdered sugar (50 grams)
  • ½ cup crushed walnuts (50 grams)
  • ½ tsp vanilla bean paste (optional)
  • ground cinnamon+icing sugar for dusting (optional)

Instructions
 

  • In a large mixing bowl, add the flour along with the softened butter, icing sugar, vanilla (optional), and crushed walnuts. Use your fingertips to gently mix them until they come together to form a soft dough.
  • Next, take a piece of cookie dough about the size of a walnut, roughly 20 grams, and roll it into a ball. Gently flatten the cookie ball and place it onto a baking sheet lined inside the air fryer basket (make sure to remove the grid). Repeat this process until you've used up all the cookie dough. This should give you around 14-16 cookies.
  • If your air fryer has a bake mode, set it to 330°F (165°C). Bake the cookies for 11-12 minutes, or until they turn slightly golden brown on the edges.
  • While the cookies are still warm, mix a tablespoon of icing sugar with a teaspoon of cinnamon. Dust this mixture over the cookies for an extra touch of sweetness and flavor.

Notes

  • For the best flavor, use high-quality, fresh walnuts. Lightly toasting them before adding to the dough can boost their nutty taste.
  • Make sure to remove the grid and line the air fryer basket with parchment paper to prevent the cookies from sticking.
  • If you need to quickly soften butter and forgot to leave it out, try this trick: Fill a large glass jar with boiling water to heat it up. Once warm, pour out the water and cover the butter with the jar for a few minutes. This will soften the butter efficiently.
  • Cookie recipes often require precision, and using a kitchen scale to measure ingredients by weight is the most reliable method to avoid disappointments.
  • Mix the dough only until the ingredients are combined to avoid making tough cookies.
  • If you have time, chill the dough in the fridge for about 20 minutes before baking to help the cookies keep their shape and enhance the flavors.
  • Make sure to leave some space between each cookie on the baking sheet as they will spread a bit while baking.
