Wash and dry the baby potatoes. Cut the larger ones in half or quarters to ensure even cooking.
In a mixing bowl, toss the potatoes with olive oil, salt, pepper, and cajun spices. Make sure each piece is evenly coated for the best flavor.
Arrange the potatoes in a single layer inside the air fryer basket. Avoid overcrowding to ensure even cooking.
Set the air fryer to 195°C (385°F) and cook for 18–20 minutes, shaking the basket halfway through. The potatoes should be crispy on the outside and fork-tender inside.
Once done, transfer the potatoes to a serving dish and sprinkle with freshly chopped herbs for extra flavor. Serve immediately while hot and crispy.

If cutting the potatoes, make sure they’re all similar in size for even cooking.
