These Crispy Air Fryer Duck Spring Rolls are made with tender duck meat, hoisin sauce, cucumbers, and green onions, all wrapped in crunchy wrappers.

Ingredients
  

  • ½ pack spring roll wrapper (Size of 10 " x 10 "/25 cm x 25 cm)
  • 2 ½ cups roast duck meat (300 grams)
  • 5 spring onions (sliced)
  • 3 Persian cucumbers (julienned)
  • ½ cup hoisin sauce (130 grams)
  • ¼ tsp salt
  • ¼ tsp freshly ground black pepper
  • 1 tbsp vegetable, rapeseed, or sunflower oil

Instructions
 

Preparing the Duck Filling

  • Shred the roasted and cooled duck meat into small pieces and transfer it to a large bowl. Prepare the cucumbers, peel and julienne them using a Thai peeler, or a sharp knife. 
  • Add the cucumbers to the bowl along with sliced spring onions, seasoning and hoisin sauce. Mix well until all combined.

Folding the Spring Rolls

  • Gently peel away the spring roll wrappings from each other, and cover them with a damp cloth to avoid them drying out.
  • Place the wrapper on a cutting board, and angle it to a diamond shape. 
  • Add about 2 tablespoons of the duck filling to the corner that is closer to you leaving a small gap on both sides and spread it out in a parallel line. Be careful not to overfill, as this can make wrapping difficult.
  • Fold the corner over the filling, then fold in the sides, and roll up tightly. 
  • Make a thick paste with 1 tablespoon of flour mixed with ⅓ cup of water. Brush a little paste on the tip of the pastry and crimp together to avoid it opening while air frying.
  • Set it aside on a plate, cover it with a damp tea towel and continue until you’ve filled all the wrappers. This recipe makes about 15-16 large spring rolls in total. The rest of the wrappers can be stored in the freezer for up to 3 months!

Air Frying the Spring Rolls

  • Place the spring rolls in the basket in a single layer, making sure they don’t touch each other. Depending on the size of your air fryer, you may need to cook them in batches.
  • Lightly brush the tops of the spring rolls with oil using a pastry brush. I personally don't like using spray oil but you can use it if you prefer so.
  • Set your air fryer to 390 ℉ (200 ℃) and air fry the spring rolls for about 12-13 minutes, turning them halfway through, until they are golden brown and crispy.
  • Arrange the crispy duck spring rolls on a serving platter with the dipping sauce on the side.

Notes

  • If using frozen wrappers, you need to remember defrosting them overnight in the refrigerator or at room temperature for 30 minutes before using them.
  • Spring roll wrappers can dry out quickly, making them difficult to work with. Keep a damp cloth over the wrappers you’re not using to keep them pliable.
  • It’s tempting to pack in as much filling as possible, but overfilled spring rolls can burst open during cooking. Stick to about 2 tablespoons of filling per roll.
  • Use small spring roll wrappers if you want to make finger food for a party or get together.
