Air fryer spring rolls are perfect for making ahead; they freeze well, and you can fry them straight out of the freezer.

Ingredients You’ll Need

  • Spring roll pastries – They come in two different sizes and I use the large size (25 cm x 25 cm / 10 ” x 10 “) for this recipe. They are great for serving as an appetizer or a snack. You can use a small size if you want to serve your Crispy Air Fryer Duck Spring Rolls as a finger food for parties.
  • Duck – I buy pre-cooked ducks from large grocery stores or Asian shops. They only take half an hour to cook in the oven.
  • Cucumbers – You will need 3 Persian cucumbers or 1 ½ large English cucumbers. Peel and julienne the cucumbers using a Thai peeler, or a sharp knife.
  • Spring onions – They are also called scallions or green onions. I wash, dry, and thinly slice them before adding them to the mixture.
  • Hoisin sauce – It is a thick, sweet, and fragrant sauce popular in Chinese cooking. It is used as a glaze for meat, an addition to stir-fry, or as a dipping sauce.

How to Make Crispy Air Fryer Duck Spring Rolls?

Important Note

Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.

Making these Chinese-style crispy Air Fryer Duck Spring Rolls is very easy. However, you need to follow a few simple steps to achieve the best results :

Prepare the Duck Filling

Shred the roasted and cooled duck meat into small pieces and transfer it to a large bowl.

Prepare the cucumbers, peel and julienne them using a Thai peeler, or a sharp knife.

Add the cucumbers to the bowl along with sliced spring onions, seasoning, and hoisin sauce. Mix well until all combined.

Fold the Spring Rolls

Gently peel away the spring roll wrappings from each other, and cover them with a damp cloth to avoid them drying out.

Place the wrapper on a cutting board, and angle it to a diamond shape.  Add about 2 tablespoons of the duck filling to the corner that is closer to you leaving a small gap on both sides and spread it out in a parallel line. Be careful not to overfill, as this can make wrapping difficult.

Fold the corner over the filling, then fold in the sides, and roll up tightly.

Make a thick paste with 1 tablespoon of flour mixed with ⅓ cup of water.

Brush a little paste on the tip of the pastry and crimp together to avoid it opening while air frying.

Set it aside on a plate, cover it with a damp tea towel, and continue until you’ve filled all the wrappers.

Quick Tip!

This recipe makes about 15-16 large spring rolls in total. One pack usually contains 30 large or 50 small wrappers. The leftover wrappers can be stored in the freezer for up to 3 months!

Air Fry the Duck Rolls

Place the spring rolls in the basket in a single layer, making sure they don’t touch each other. Depending on the size of your air fryer, you may need to cook them in batches.

Lightly brush the tops of the spring rolls with oil using a pastry brush. 

Set your air fryer to 200 ℃ (390 ℉) and air fry the spring rolls for about 12-13 minutes, turning them halfway through, until they are golden brown and crispy. Arrange the crispy duck spring rolls on a serving platter with the dipping sauce on the side.

  • If using frozen wrappers, you need to remember to defrost them overnight in the refrigerator or at room temperature for 30 minutes before using them.
  • Spring roll wrappers can dry out quickly, making them difficult to work with. Keep a damp cloth over the wrappers you’re not using to keep them pliable.
  • It’s tempting to pack in as much filling as possible, but overfilled spring rolls can burst open during cooking. Stick to about 2 tablespoons of filling per roll.
  • Use small spring roll wrappers if you want to make finger food for a party or get-together.
