The air fryer has changed the way we cook, and baked Brie is no different. It’s faster since air fryers heat up quickly, so there’s less preheating time. The hot air cooks the puff pastry evenly, making it golden and flaky, while the cheese melts perfectly without overcooking.
Ingredients You’ll Need
- Brie – When buying Brie cheese, buy a good quality one that is creamy, with a smooth, edible rind. You can substitute it with Camembert, which has a stronger and earthier taste compared to Brie.
- Puff pastry – I use a rolled-up all-butter puff pastry sheet measuring 35cm x 23cm (14″x9″), weighing 320 grams, and about 2-3 mm (⅛”) thick. You can find these fresh or frozen at most supermarkets. If you’re using frozen pastry, let it thaw and reach room temperature before using it.
- Walnuts – They add crunch and nutty flavor to baked brie or any other cheese. You can also use pecan nuts, pistachios, or any other nuts available.
- Egg yolk – Eggwash gives the puff pastry a golden brown color so don’t skip it!
How to Make Air Fryer Baked Brie in Puff Pastry
Important Note
Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.
Making Air Fryer Baked Brie in Puff Pastry is extremely easy to make and to achieve the best results, you need to follow these simple steps:
If your puff pastry is frozen, let it sit at room temperature for about 20-30 minutes until pliable but still cold. Unfold the puff pastry on a lightly floured surface and place the Brie in the center.
Make 4 slits on top of the cheese, spread a layer of cranberry sauce on top, and scatter the walnuts over the sauce.
Fold the puff pastry over the cheese, ensuring it’s fully sealed to prevent leaks during cooking. Egg wash the puff pastry using a pastry brush to coat it evenly. If the pastry warms up too much while assembling, pop it in the fridge for 10 minutes before cooking.
Set your air fryer to 390℉ (200℃) and line the basket with parchment paper to prevent sticking. Place the wrapped Brie in the air fryer basket and cook for 10- 12 minutes, checking periodically to ensure the pastry doesn’t overbrown.
Quick Tip!
Air fryer models vary, so keep an eye on the pastry to prevent burning.
Let the baked Brie sit for 2-3 minutes before serving to allow the cheese to settle slightly.
Expert Tips From the Chef
- Use fresh, good-quality, creamy Brie or Camembert cheese that has a smooth, white rind, and without any off-putting odors.

- Don’t skip the eggwash if you want a shiny, appetizing crust.
- Ensure the puff pastry is fully cooked before removing it from the air fryer.
