This super easy Air Fryer Lamb Rib Chops recipe is quick to make and guarantees tender, juicy, and flavorful lamb with a crispy, golden fat cap every time.
Pat the lamb chops dry with a paper towel to help the seasoning stick. Rub them with olive oil, then season generously with dried thyme, salt, and pepper on both sides.
Set your air fryer to 400°F (205°C) and let it preheat for a few minutes. Preheating ensures even cooking and a nice sear on the outside of the chops.
Place the seasoned lamb chops in the air fryer basket in a single layer, ensuring they don’t overlap.
Cook for 8–10 minutes, flipping halfway through. Adjust the cooking time if you prefer them more or less done.
Remove the lamb chops from the air fryer and let them rest for 5 minutes. This helps the juices redistribute, keeping the meat tender.

Use a Meat Thermometer to check the internal temperature. Medium-rare is 135°F, medium is 145°F, and well-done is 160°F.
