Place the coconut oil and honey in a small saucepan and gently melt them on low heat.
In a large bowl, place your oats, cashew nuts, coconut shavings, salt, and cinnamon powder. Pour in the melted honey and butter mixture. Stir everything until the oats are fully coated.
Set your air fryer to 340°F (170°C). Line the air fryer basket with parchment paper to prevent sticking.
Spread the granola evenly in the air fryer basket and press it down lightly to create a flat layer. Don’t overcrowd the basket, as the air needs space to circulate. If your air fryer is small, you might need to cook in batches.
Set the timer for 8-10 minutes, checking and gently stirring halfway through to ensure even cooking. Keep an eye on it to avoid burning.
Add the sultanas last minute of the cooking process.
Once the granola is golden brown and crisp, remove it from the air fryer and let it cool completely. As it cools, it will harden and become even crunchier. This is the best time to add chocolate chips if you wish, as adding them before could cause them to melt.
