Ingredients
  

  • 2 large eggplants
  • 2 tbsp olive oil
  • 2 cups marinara sauce
  • 100 g parmesan (grated)
  • 200 g mozzarella  (shredded)
  • ½ bunch basil leaves
  • ½ tsp salt
  • ¼ tsp freshly ground black pepper
  • ¼ tsp dried thyme

Instructions
 

  • Peel the eggplants in a zebra pattern and cut them into even slices, about ¼ inch thick.
  • Brush or spray the eggplant slices with olive oil. Season with salt, pepper, and thyme. Put the slices in the air fryer basket in a single layer.
  • Air fry at 195°C (383°F) for 12 to 15 minutes. Flip halfway until the slices are golden and crisp. Cook in batches if needed.
  • Spread a thin layer of marinara sauce on the bottom of a baking dish or an oven-safe dish that fits in your air fryer.
  • Place a layer of eggplant on top. Add parmesan, mozzarella, and some basil. Repeat until all ingredients are used. End with sauce and cheese on top.
  • Set the air fryer to 180°C (356°F). Place the dish in the air fryer for about 18 to 20 minutes until the cheese is melted and bubbling. 
  • Let the dish rest for 5 minutes. Add extra basil on top before serving.

Notes

  • Keep space between slices in the air fryer. Overcrowding makes them steam instead of being crisp.
  • Fresh Parmesan has more flavor and melts better than pre-grated cheese.
  • If you like cheese pulls, use mozzarella slices instead of shreds.
  • Add fresh basil at the very end for the best taste.
  • If your marinara sauce is thick, you can thin it with a splash of water before layering.
