Ingredients You’ll Need

  • Eggplant – Choose firm, glossy-skinned eggplants with no soft spots. I use 2 large or 3 medium-sized eggplants. Slice them into ¼ inch rounds.
  • Olive oil – I prefer using high-quality olive oil with a rich, fruity flavor for cooking, but you can use any oil you like.
  • Cheese – I use freshly grated Parmesan cheese and shredded buffalo mozzarella for this eggplant parmigiana dish.
  • Marinara sauce – I use homemade marinara sauce, but you can use your favorite store-bought sauce to make things quicker.
  • Herbs – Fresh basil and dried thyme. You can use fresh thyme if you prefer.

How to Make Healthy Air Fryer Eggplant Parmesan

Important Note

Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.

Peel the eggplants in a zebra pattern and cut them into even slices, about ¼ inch thick.

Brush or spray the eggplant slices with olive oil. Season with salt, pepper, and thyme. Put the slices in the air fryer basket in a single layer.

Air fry at 195°C (383°F) for 12 to 15 minutes. Flip halfway until the slices are golden and crisp. Cook in batches if needed.

Spread a thin layer of marinara sauce on the bottom of a baking dish or an oven-safe dish that fits in your air fryer. Place a layer of crispy eggplant on top. Add parmesan, mozzarella, and some basil.

Repeat until all ingredients are used. End with sauce and cheese on top.

If you like cheese pulls, use mozzarella slices instead of shreds.

Set the air fryer to 180°C (356°F). Place the dish in the air fryer for about 18 to 20 minutes until the cheese is melted and bubbling. 

Let the dish rest for 5 minutes. Add extra basil on top before serving.
