Ingredients You’ll Need

  • Zucchini (courgette) – Select firm and fresh zucchini that are free of blemishes. These will hold their shape better during cooking. Yellow squash works just as well as zucchini in this recipe.
  • Red onion – A small red onion adds slight sweetness when caramelized. You can also use shallots or white onions.
  • Olive oil – I use a tablespoon of good quality olive oil to help with the caramelization of the vegetables and to add extra flavor.
  • Seasoning – Salt, pepper (white or black), and paprika.

How to Make Air Fryer Roasted Zucchini with Red Onions?

Important Note

Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.

Although making this deliciously healthy Air Fryer Roasted Zucchini is very easy, you need to follow a few simple steps to achieve the best results :

Start by washing the zucchini thoroughly. Slice them into rounds or wedges (as shown in the picture), about ½ inch (1½ cm) thick. Try to cut them all into similar sizes and shapes to cook evenly and get nice and crispy in the air fryer.

Next, peel the red onion and slice it into thin wedges. The size of the onion pieces can vary, but thinner slices will cook more quickly and get a bit caramelized. Place the sliced zucchini and red onion in a large bowl. Drizzle the olive oil over the vegetables, and add the paprika, salt, and pepper. Toss everything together until the vegetables are evenly seasoned.

Set your air fryer to 205 ℃ (400 ℉), remove the gris, and spread the seasoned zucchini and onions in the air fryer basket. Try to keep them in a single layer for even cooking. Depending on the size of your air fryer, you might need to cook them in batches.

Cook the vegetables for about 12-13 minutes, shaking the basket halfway through to ensure all pieces are cooked evenly and achieve that desirable crispiness.

Quick Tip!

For a cheesy twist, sprinkle grated Parmesan cheese over the vegetables during the last 5 minutes of cooking.

Transfer the vegetables to a serving dish and pair them with a bowl of yogurt sprinkled with dill.

  • One of the keys to crispy air fryer vegetables is not overcrowding the basket. If you pile them on top of each other, they’ll steam instead of roast. Cook in batches if necessary.
  • Keep an eye on your veggies as they cook, and give the basket a good shake halfway through to ensure even cooking and prevent sticking.
  • For a cheesy twist, sprinkle grated Parmesan cheese over the vegetables during the last 5 minutes of cooking.
