How to Make Turkey Legs in the Air Fryer

Get the Leg Ready

Pat the drumstick dry all over with paper towels. Dry skin browns, damp skin steams. Mix the olive oil, paprika, salt, pepper, thyme, chili flakes, and lemon zest in a small bowl. Rub the mixture over the whole leg. Work it into every crease and under any loose skin.

First Stage

Set the leg in the basket so it sits flat. Air fry at 360°F (180°C) for 1 hour. Flip the leg every 20 minutes so it browns evenly on all sides.

Crisp the Skin

Turn the heat up to 400°F (200°C). Cook for 10 more minutes, until the skin is deep golden and the thickest part reads 165°F (74°C) on a meat thermometer. Rest the leg for 10 minutes before carving.

Recipe Tips From the Chef

  • Dry the skin well before the rub goes on. This is the single biggest factor for crispness.
  • Zest only the yellow part of the lemon. The white pith underneath tastes bitter.
  • Push the thermometer into the thickest part of the leg, close to the bone but not touching it.
  • Air fryers vary. Start checking the temperature 10 minutes before the end of the first stage.
  • Pick a drumstick that sits flat in your basket. If it presses against the heating element, the skin scorches in one spot.
  • Let the leg rest before carving. The juices settle back into the meat instead of running out onto the board.

Cooking Smaller Turkey Legs

Standard supermarket drumsticks weigh around 1 lb (450 g). They cook much faster than the giant ones. Give them about 30 minutes at 360°F (180°C) before the same 10 minute crisping stage at 400°F (200°C). Start checking with a thermometer at the 30 minute mark. The thickest part needs to reach 165°F (74°C).

Serving Suggestions

Keep leftover air fryer turkey legs in an airtight container in the fridge for up to 4 days. For longer storage, pull the meat off the bone. Wrap it well and freeze it for up to 3 months. Thaw overnight in the fridge.

To reheat, air fry slices at 350°F (175°C) for 5 to 8 minutes until piping hot. The skin crisps up again in the last couple of minutes.

Do I need to brine the turkey leg?

No. The long, gentle first stage keeps the meat juicy without any soaking. If you do brine, pat the leg very dry before the rub goes on.

Can I cook a frozen turkey leg in the air fryer?

Thaw it in the fridge overnight first. A leg this thick cooks unevenly from frozen. The outside dries out before the middle reaches a safe temperature.

Where can I buy big turkey drumsticks?

Butchers and farm shops carry them year round. Supermarkets stock them around the holidays, so it is worth buying extra then for the freezer.

Can I cook more than one leg at a time?

Only if they fit in a single layer with space between them. In most baskets, one giant drumstick is the limit. Two smaller legs work if air can move between them.

Why is my skin not crispy?
