As the weather warms up and fresh greens pop up at the markets—or out in nature if you enjoy foraging like I do—it’s a nice time to bring that freshness into your kitchen. Cooking a frittata in the air fryer is quick and easy, and it comes out with a lovely texture. It’s also a great way to use up any extra veggies you have at home, and you can switch things around depending on what’s in your fridge.

What Is a Frittata?
Frittata is an Italian-style omelet, but unlike a traditional omelet that’s cooked quickly and folded, a frittata is slower-cooked and finished in the oven—or in this case, the air fryer. It’s usually made with eggs, dairy (like milk or cream), and filled with vegetables, cheese, and sometimes meat. It’s hearty, wholesome, and incredibly versatile.

Why This Recipe Works So Well
This air fryer version keeps the whole process simple and hands-off. You don’t need to watch the stove, and you get a nicely cooked frittata with a lightly golden top and fluffy interior. It’s a great way to bring fresh, healthy ingredients into your weekly rotation without spending hours in the kitchen.
Ingredients You’ll Need

- Eggs – The base of the frittata. Large, fresh, free-range eggs work best.
- Water, milk or cream – I usually add water for a fluffy texture but you can add milk or cream to add a little creaminess. You can use dairy-free milk too if preferred.
- Spring greens – Think spinach, wild garlic leaves, kale, chard, arugula, or even nettles if you’re feeling adventurous.
- Scallions or leeks – These add a gentle onion flavor that pairs perfectly with eggs.
- Fresh herbs – Dill, parsley, mint, or chives are all lovely.
- Cheese – Feta, goat cheese, or shredded cheddar can all work depending on your taste.
How to Make Air Fryer Frittata with Spring Greens
Important Note
Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.
Wash your greens and herbs, chop them finely, and slice your scallions.
Quick Tip!
If you’re using tougher greens like kale or chard, remove the stems and sauté them briefly in a pan to soften before adding them to your egg mixture.
Crack your eggs into a bowl, add water, milk or cream, season with salt, paprika, and pepper, and whisk until well combined. Stir in the herbs, and chopped vegetables.

I use a small oven-safe dish that I also use for making air Fryer Mushroom and Cheese Omelette but any air fryer-safe container or a round cake tin would work well too. Lightly grease it with oil or butter to prevent sticking. Pour the egg mixture into your prepared pan and gently shake it to level out.

Sprinkle on the grated cheese.

Preheat your air fryer if needed (some models require it), then cook at 180°C (356°F) for about 10-12 minutes. Check for doneness by inserting a toothpick in the center—it should come out clean when the frittata is set.

Expert Tips From the Chef
- Don’t overfill your pan: The frittata will puff up slightly as it cooks, so leave some space at the top.
- Use cooked veggies: Raw greens with high water content can make the frittata soggy. If using watery vegetables like zucchini or mushrooms, cook them first and let them cool before adding.
- Choose the right pan size: A 6 to 7-inch pan works well in most standard air fryers.
- Let it rest: Allow the frittata to cool for a few minutes before slicing. This helps it firm up and makes slicing easier.
What to Serve With Frittata
Frittata is super flexible and works well with all kinds of sides depending on the time of day. Here are a few serving ideas:
For Breakfast or Brunch:
- Toasted sourdough or crusty bread
- Sliced avocado
- Fresh fruit or berries
For Lunch or Dinner:
- A crisp green salad such as Mango Salat with Avocado and Cucumber
- A spoonful of yogurt or a drizzle of tahini dressing
Make-Ahead and Storage Tips
This frittata keeps well and is just as good cold as it is warm. Let it cool completely, then wrap it or store in an airtight container in the fridge for up to 3 days. Frittata freezes surprisingly well. Cut into slices, wrap individually, and freeze for up to 3 months. Thaw in the fridge before reheating.
To reheat, warm slices in the air fryer for a few minutes or microwave briefly.
Variations to Try
You can easily tweak this recipe based on what you have on hand. Here are a few ideas:
Swap the Greens
Try baby spinach, arugula, kale, Swiss chard, or beet greens. Even frozen spinach works if you drain it well.
Add Protein
Add cooked bacon, sausage, smoked salmon, or shredded chicken for a heartier version.
Try Different Cheeses
I usually go for cheddar cheese but feta, goat cheese, mozzarella, or even blue cheese can bring something different.
Spice It Up
Add a pinch of chili flakes, smoked paprika, or a dash of harissa for a little extra heat.
Recipe FAQs
It’s a good idea to preheat the air fryer for a few minutes, especially for even cooking. But if you forget, it’s not a big deal—just add a couple more minutes to the cook time.
The top should look set and slightly golden, and the center should no longer be wobbly. You can also stick a toothpick or knife in the middle—if it comes out clean, it’s ready.
