Give the beets a good rinse to remove any dirt, then trim the greens, leaving about one inch of the stems attached. Keeping a little bit of stem helps prevent too much bleeding during cooking. Tear a piece of foil large enough to wrap each beet completely. Alternatively, you can wrap a few similarly sized beets together instead of wrapping them individually. Place the beet in the center, drizzle lightly with olive oil and sprinkle on some salt, and wrap tightly so no steam escapes.

Preheat your air fryer to 375°F (190°C). Place the foil-wrapped beets into the basket in a single layer, leaving space for air to circulate. Roast for 50-75 minutes, depending on the size of the beets. Carefully open one foil packet and test with a fork or skewer. If it slides in easily, the beets are ready.
