Ingredients You’ll Need

- Puff pastry – I use a ready-rolled pastry the size of 35 cm x 25 cm (14″ x 10″). They are available either fresh or frozen in large supermarkets. You can use block puff pastry if that’s what is available and roll it out into a rectangle with a similar size.
- Sausage meat – It is usually found near bacon or sausages in the refrigerated section of supermarkets. If preferred, you can use your favorite sausages by removing the casing.
- Shallots – You can use a small onion if you don’t have shallots. Finely chop it and lightly sauté with garlic to bring the sweetness out of it.
- Egg – The egg white helps bind the sausage meat, while the yolk is used to brush the pastry for a golden, glossy finish.
How to Make Homemade Sausage Rolls in Air Fryer
Important Note
Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.
Making Air Fryer Mini Sausage Rolls from scratch is extremely easy and to achieve the best results, you need to follow these simple steps:
PREPARE THE FILLING
Place a pan over low heat, add olive oil, and gently sauté the shallots and garlic until soft and slightly caramelized. Stir in the fennel seeds and cook for another minute before transferring everything to a large bowl. Once the shallots have cooled slightly, add the sausage meat, egg white, chopped herbs, black pepper, and salt.

Mix until well combined, being careful not to overmix.

ASSEMBLE THE SAUSAGE ROLLS
Unroll the puff pastry on a lightly floured surface and cut it into two long strips.
Quick Tip!
If using frozen pastry, defrost it completely in the fridge overnight and then leave it for 10 minutes at room temperature before using it.

Divide the sausage mixture evenly and lay them along the length of each of the pastry rectangles about 2 cm – 1″ in from the edge.

Lightly brush the edge of both pastries, fold the pastry over the sausage filling, pressing the edges to seal.

Cut each sausage roll into 8 with a sharp knife, and place them seam-side down. You’ll have 16 mini sausage rolls in total.

AIR FRY SAUSAGE ROLLS
Preheat the air fryer to 180°C (350°F) for 3 minutes. Brush each sausage roll with the egg yolk and sprinkle with sesame or nigella seeds if using. Arrange them in a single layer in the air fryer basket without overcrowding them.

Cook for 12-15 minutes or until golden brown and fully cooked inside.
