Air Fryer Buffalo Chicken Thighs
With this Air Fryer Buffalo Chicken Thighs recipe, you can skip deep-frying and still get juicy chicken with crisp edges and plenty of heat. They are easy to make, use everyday ingredients, and come together without much hands-on time. The buffalo sauce coats the chicken beautifully and adds that familiar spicy, tangy kick people love. This is a great option for weeknight dinners, casual gatherings, or nights when you want something delicious without a lot of work.

This has become one of my go-to ways to cook chicken thighs at home. The air fryer keeps the meat tender and helps the skin crisp nicely without extra oil. If buffalo-style chicken is your thing, this recipe fits right in with other favourites like BBQ Chicken Thighs or Air Fryer Bone-in Chicken Thighs.

Ingredients You’ll Need

- Chicken thighs – They are the star of the dish. Bone-in chicken thighs stay juicy and cook evenly in the air fryer, and skin-on gives you a crisper texture. You can use your favorite cuts and just adjust the cooking time. Boneless chicken thighs cook slightly faster, so check them a few minutes early.
- Buffalo sauce – You can use your favorite buffalo sauce. I make my own by combining hot sauce with honey and vinegar.
- Olive oil – A light coating helps the skin crisp up and prevents sticking.
- Seasoning – I use a mixture of smoked paprika, salt, and black pepper. You can also add garlic powder and onion powder or replace smoked paprika with sweet paprika.
How to Cook Chicken Thighs in Air Fryer
Important Note
Before you start cooking, note that times may differ among air fryers. I develop my recipes using a Cosori 6.8 air fryer. If you’re using a different air fryer, view my recipes as a general guide and tweak the cooking time—add a bit more or cook slightly less as needed.
Start by patting the chicken thighs dry with kitchen paper. Place the thighs in a bowl, drizzle with olive oil and vinegar, and sprinkle over the smoked paprika, salt, and black pepper. Turn the chicken until everything is evenly coated.

Quick Tip!
Drying the skin before seasoning makes a noticeable difference. Any extra moisture can slow down cooking and affect texture.
Place the chicken in the air fryer basket in a single layer. Leave space around each piece so the air can circulate.

Cook at 375°F (190°C) for 18 to 20 minutes, turning halfway through, until the chicken is cooked through and nicely browned. While the chicken cooks, warm the buffalo sauce gently. For a richer sauce, stir in a tablespoon of melted butter until smooth. Once the chicken is cooked, brush or toss it with the buffalo sauce. Return it to the air fryer for another 5 to 6 minutes so the sauce settles onto the chicken.

Let it rest for a few minutes before serving.

Recipe Tips From the Chef
- Always dry the chicken before seasoning.
- Avoid overcrowding the air fryer basket.
- If you want extra crisp skin, start cooking the chicken skin-side down, then flip it halfway through.
- Turn the chicken halfway through cooking for even colour.
- Add the buffalo sauce at the end to stop it burning.
Storage Advice
These air fryer buffalo chicken thighs store well, which makes them useful for leftovers. Let the chicken cool fully before storing. Keep it in an airtight container in the fridge for up to 5 days.
For longer storage, freeze the cooked chicken in freezer-safe containers or bags. Separate layers with baking paper and freeze for up to 3 months.
To reheat, place the chicken back in the air fryer at 180°C until heated through. A microwave also works, but the skin will be softer.
Serving Ideas
These chicken thighs are easy to pair with simple sides.
They work well with:
- Celery and carrot sticks
- A basic green salad such as Greek Lettuce Salad (Maroulosalata)
- Air Fryer German Potato Pancakes, Air Fryer Potato and Onions, or 20 Minutes Air Fryer Sweet Potato Wedges
- Rice with extra sauce on top
They can also be used in wraps or sandwiches.
Recipe FAQs
It works best to thaw them first. Cooking from frozen leads to uneven cooking and excess moisture.
Turning the chicken helps with even browning, especially with skin-on thighs.
